I'm Makin' Enchiladas

I’m making enchiladas! The chicken thighs are in the slowcooker with garlic, chopped onion, chili-infused olive oil, and of course generous salt & pepper. Once they’re tender enough to shread, I’ll add green chilis and some chopped jalepeño, along with enchilada sauce (from a can, bc I am lazy) and cook that for a few more hours. Then it’ll be time to wrap the filling in tortillas, throw so much cheese on top, and pop ’em in the oven. I can’t wait! :d
